For an AYCE buffet, I've seen bigger selections at all-inclusive resorts but I think they had enough variety. there are busboys clearing tables constantly. A server is assigned to a group of tables and they clear plates, serve drinks (alcohol is extra price), and generally keep their assigned area tidy.
We went on a regular night, not one of the special nights, and it was $37/pp plus tip.
